The Paderno World Cuisine cleaver most commonly resembles a rectangular-bladed hatchet. The cleaver has an especially tough edge meant to withstand repeated blows directly into thick meat, dense cartilage and even bone, not to mention the cutting board and any other supporting surface below. The edge of a meat cleaver does not need to be particularly sharp, because the knife's design, like that of a hatchet or an axe, relies on sheer momentum to cut efficiently, slashing straight through rather than slicing in a sawing motion. Part of the momentum derives from how hard you swing and the other part derives from the weight of the cleaver. The blade angles slightly upward away from the handle. The blade has a thickness of 9 mm and measures 10 7/8" by 5 7/8".
